I guess it really depends on the type of vitamin deficiency that you’ve got, but I guess they will mostly be monitored via blood tests. For instance, I have a permanent vitamin B12 deficiency because of some surgery I had when I was 18. It’s monitored by having regular blood tests taken, to see how much I’ve got in my blood stream, and every 3 months or so, I have to have an injection to top it up. As for the specific blood tests that are performed, I’m not quite sure!
