Great question! Rice is what’s known as a ‘staple food’, which are foods that are eaten regularly and in large quantities. They’re usually foods that are cheap to make, or cheap to buy, but which contain important nutrients that we need to survive (things like carbohydrate, protein and fat). Rice contains all of these, plus small quantities of minerals and vitamins (the exact amount depends on the type of rice). So we eat a lot of it, because it provides us with nutrients and energy!
